No-Cook Summer Taco Bowls

Ingredients

  • 1 tin black beans (rinsed) OR chickpeas
  • 1 red capsicum
  • 1 cucumber chopped
  • 1/2 red onion chopped
  • 1 tin corn
  • 1 tin tuna or salmon
  • 1 Lime or lemon
  • corn chips
Allergens

Gluten if corn chips are used.

Method

  1. Mix beans + veg + fish with citrus and a pinch of salt.
  2. Scoop with chips or wrap it up.
  3. You can also pop this in toasties and wraps!
  4. A dollop of sour cream and sweet chilli would go down a treat!
  5. Fresh coriander or parsley too!
Recipe Notes

Not a tuna fan? Use chicken instead. A 1/2 cooked chook or a cooked chopped chicken breast.
